Ingredients
- Dry Ingredients
3 cups of rolled oats (use gluten-free ones if necessary)
1/2 cup brazil nuts (chopped)
- Wet Ingredients
1/2 cup pistachio butter* (homemade or store bought)
1/3 cup raw cacao powder
1/3 cup maple syrup
3 Tbsp vegan butter (melted)
1 tsp vanilla extract
- Add-ins
1/2 cup apricots**
1/3 cup golden raisins**
1./3 cup vegan dark chocolate chips
Directions
- Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, chopped pistachios and brazil nuts.
- In another bowl, whisk the wet ingredients together until everything in well mixed.
- Pour the wet mixture over the dry ingredients. Mix thoroughly until well combined.
- Spread the mixture evenly onto the lined baking tray. Bake for 10 minutes, stir, then continue baking for another 10–15 minutes, or until golden and fragrant. Keep an eye — cacao can burn quickly!
- Let cool completely. The granola will crisp up as it cools.
- Stir in your chopped dried fruit and chocolate chips. Store in an airtight jar for up to a month.

- * Pistachio butter can be swapped with almond, cashew, or sunflower butter if needed.
