Matcha & Chocolate Tofu Mousse Parfait (Vegan, Gluten-free, Refined Sugar Free)

I received a sachet of matcha powder from Matcha Maiden and some amazing craberry powder from Arctic Power Berries the other day and I was figuring out what to make with it to bring with me to the office. When I opened the fridge, I saw a lovely block of organic tofu sitting there waving at me. So, I decided to make a tofu mousse parfait with it as it’s simple and I haven’t had this for ages. I improved this recipe with a secret ingredient – psyllium husk added.

This little tofu mousse parfait is filled with goodness, with proteins from Tofu, as well as anti-oxidants from matcha and raw cacao powder. I also topped it with some chopped Aduna Raw Moringa Energy Bar which is super-charged with a full teaspoon of Aduna Moringa Superleaf Powder, full of protein and an easy way to up

your greens intake on-the-go, giving your health and beauty a super-boost. Most importantly, it turns out to be so UNEXPECTEDLY fluffy and even fluffier after sitting in the fridge overnight 😊

Ingredients:

Matcha Tofu Mousse:

1/2 block organic firm tofu
1 Tbsp non-dairy milk (I used almond mylk)
1 tsp matcha powder
1 tsp raw coconut nectar
1/2 tsp psyllium husk

Chocolate Tofu Mousse:

1/2 block organic firm tofu
1 Tbsp non-dairy milk (I used almond mylk)
1 sachet of Mushroom chocolate from Four Sigmatic
1 Tbsp raw cacao powder
1/2 tsp psyllium husk powder

Toppings:

1/2 Aduna Raw Moringa Energy Bar
1 tsp Arctic Power Berries Cranberry powder
Handful of raw cacao nibs

Directions:

  1. Place all ingredients of the chocolate tofu mousse into a food processor and process until smooth.
  2. Scoop the mouse out and place it at the bottom of a glass jar.
  3. Rinse the food processor very well and do the same for the matcha mousse.
  4. Pour the matcha mousse on top of the chocolate mousse and top with some chopped Aduna Raw Moringa Energy Bars, with a sprinkle of Arctic Power Berries’ Cranberry powder and a handful of raw cacao nibs.
  5. Place it in the fridge for at least half an hour or even better to be overnight.
  6. You can now enjoy this fluffy and flavorful tofu mousse for breakfast on-the-go or dessert at the office 💚
