Avocado Pesto Sauce (Raw, Vegan, Gluten-free)

This avocado pesto recipe is great as a main dish when you have no much appetite or as a side dish. It’s also convenient as a packed lunch on the go too! I hope you enjoy it as much as I do 😃

Ingredients:

Zoodle

1 medium zucchini

Avocado Pesto

1 cup fresh basil leaves
1/2 hass avocado
2 garlic cloves
3 Tbsp oil of your own choice
1 Tbsp nutritional yeast
1/4 tsp Organic Burst wheatgrass powder
1/4 cup water
Juice from 1 lime
Salt to taste

Raw marinated mushrooms

Directions:

  1. Spiralize your zucchinis and place them in a bowl
  2. Blend the Avocado Pesto ingredients until smooth and pour it into an air-tight container for storage
  3. Add about 3 Tbsp of pesto to the zoodles. Mix in together and top with some raw marinted mushrooms from my previous blog post
  4. Let it set aside for 5 minutes for the zoodles to soften and absorb the flavour (if you can wait 😝)
  5. Enjoy this super refreshing and delicious light lunch 🙂
